Job Description


A Dining Services Organization has retained Management Business Solutions to be a value-add partner in their recruitment for the Chef/Culinary Production Manager. As a solution-based staffing organization; we have aligned our processes to mirror our clients talent strategies to identify, screen, and recruit qualified candidates.



SUMMARY: Our client is currently seeking an Executive Chef to work within the Military Dining Services Division to ensure that high-quality, properly seasoned, nutritious food and menus are being provided throughout the operation, in a fiscally responsible and sustainable manner. You'll be part of a Military Dining Services Management team that works professionally together to make sure the needs of the customer, client, staff, and colleagues are met.



RESPONSIBILITIES:



  • Ensures that all hot, cold, and bakery food production is well coordinated and staffed efficiently in military bases.

  • Responsible for achieving budgetary goals for all dining services for military base.

  • Responsible for standardization of inventory products in both kitchens.

  • Develop on-trend menus, staff training and support in order to provide excellence in variety and quality.

  • Orchestrates all hiring, scheduling, timekeeping, performance appraisals, and disciplinary actions of the kitchen staff.

  • Oversees all food purchases and controls inventory in a fiscally responsible manner.

  • Oversees the development of and selection of recipes to be used within the military base operations.

  • Lead in the production of menus and recipes to ensure that quality is offered at all times; communicates with the Military Dining Services Home Office regarding changes to the Dining Services production recipes and menus as necessary.

  • Ensures that an organized system of comprehensive production record-keeping is maintained.

  • Ensures that all kitchen equipment works and is maintained properly and kitchen is organized.

  • Standardizes the production of menus and recipes so as to ensure that quality is offered at all times; communicates with the Military Dining Services Home Office regarding changes to the production recipes and menus as necessary.

  • Estimates and forecasts food consumption, monitoring production volumes, and adjusting future production as needed; maintains budgetary controls.

  • Maintain good public relations with all customers, clients, staff, vendors, and the community; achieves high levels of customer and client satisfaction.

  • Conducts continuing analysis of production, recommending any operational changes necessary to the Dining Services Director.



QUALIFICATIONS:



  • Culinary Arts Degree, with a minimum of 5 years cooking experience.

  • ServSafe Certification

  • ServSafe Allergen Certification

  • Two years of supervisory/ managerial experience in a hospitality setting; preferably with military or government facility.

  • Proficient in basic math (multiplication, computing yields/conversions/etc.)

  • Microsoft Office proficiency

  • Membership to the American Culinary Federation preferred.



Physical Demands/Work Environment


The Production Manager position involves working in an office environment operating standard office equipment and technology along with physical work in a commercial kitchen environment.



Responsibilities include moving inventory, product, carts, tables, etc. as well as using kitchen utensils and commercial kitchen equipment. Must be able to lift and carry 25 lbs. Environment may include hot, humid, or cold temperatures. May require extended working hours at times.
